A thick chunk of marinaded and grilled tofu makes a satisfying veggie burger.
Yield: 4 burgers
Time: an hour
Tools
- baking dish large, shallow bowl
- grill or large frying pan
- spatula
Ingredients
- 1 batch marinade
- 1 pound extra-firm tofu, sliced into four 1-inch pieces and pressed
- 2 T olive oil (if using frying pan)
Directions
Mix your marinade in the baking dish, add tofu in a single layer, and flip to coat both sides. Let sit for at least 45, turning once or twice.
Grill: preheat to medium. Cook tofu 2 minutes, rotate 90 degrees (for a nice crosshatch pattern), and cook another 2 minutes. Then flip and repeat.
Frying pan: heat oil over medium heat. Cook tofu 3-4 minutes, flip, and cook the other side for another few minutes.
Dress up with your favorite burger fixings and serve immediately.
Notes
For cheeseburgers, top with a slice or two of cheese and cook another minute or so, until it melts.
You can eat these veggie burgers as you would a hamburger – on a bun or toast, topped with ketchup, mustard, mayonnaise, onion, pickles….
