This delicious, low-carb deviled tofu can be spread on celery or bread, or served atop a green salad.

Ingredients
- ½ pound tofu, pressed or squeezed, then crumbled
- 2 scallions or ¼ c red onion, chopped
- 2-3 T mayonnaise*
- 2 t Dijon mustard
- 1 t capers
- 2 t sweet relish
- ½ t curry powder
- salt
- pepper
Directions
Mix everything together and serve.
Notes
* The low carb recipe calls for just 4 t of soy mayonnaise, but I think it’s nicer with a bit more.
