If you like spicy, try these baked, Cajun-style French "fries."

Ingredients
- oil or cooking spray
- 4-5 cloves garlic, minced
- 2 t olive oil
- 4 medium-to-large boiling potatoes, scrubbed and unpeeled
- 2 T soy sauce
- 2 T rice wine vinegar
- up to 3 t Tabasco
- black pepper
Directions
Preheat oven to 375.
Very lightly oil the cookie sheet (unless it’s non-stick) and set aside.
Combine oil and garlic in the bowl.
Cut potatoes into ¼-inch sticks and toss with the garlic oil. Add soy, vinegar, and Tabasco and toss again.
Spread fries into a single layer on the cookie sheet and grind pepper over them.
Bake for 10 minutes, remove from oven, and shake/stir to turn the fries over. Continue baking another 10 minutes, shake again, and return to over for another 10 minutes.
Check fries to see if they are ready – brown and slightly crispy on the ends. If not, return to oven and check every few minutes until done.
